Co-operatives Fortnight is a two week period when co-ops of all shapes and sizes across the UK come together to encourage people to choose co-operative.

Now that Spring has sprung, time to put away our hot chocolate for something a bit more sophisticated - for al fresco dining perhaps?

Classic Mousse – the little black dress of the culinary world!
You can never go wrong with a knockout chocolate mousse at the end of a meal – a bit like a little black dress or well tailored trousers – dress up, dress down, it’ll never go out of style and will never let you down...

My mother made a spectacular mousse when we were kids but like most of her recipes, it wasn’t written down and so I’ve spent some time trying to recreate our childhood favourite.... I’ve had to try out several attempts on very willing guinea pigs and this very simple recipe is the product of hours of tastings!!

I only ever use a high quality dark chocolate for my mousses – it delivers richness  without sweetness and without adding cream or sugar, it means a few fewer calories (but it’s chocolate mousse, so who is counting!?) and it is surprisingly light!

Having said I only use dark chocolate, I had my head turned by Equal Exchange’s Salted Caramel Crunch which at 55% was surprisingly rich and unsweet..... I made up half of the recipe’s chocolate requirements with this and the other half, I used the dark Orange.... this combination delivered on every level – richness, flavour and a teensy bit of texture.....  Use just one from the range or make up any combination that suits your palate....

Make this for an intimate dinner or for a gathering – the quantities make for quite generous portions – or leaves a bit for you to have the next day..... best bit is that you can prepare this mousse recipe a few days before it’s needed – just cover with clingfilm and leave in the fridge – a total no stress, classy pud with no prep on the day!

Makes 4 generous sized mousses.

•    120 g Dark chocolate (your choice of Equal Exchange flavours)
•    60 g Butter
•    4 eggs (Separated)

•    Break the chocolate into bits and melt gradually together with the butter in a bowl over a pan of gently boiling water
•    Remove from over the pan and allow the chocolate mixture to cool
•    Separate the eggs
•    Add yolks to the cooled chocolate mixture and mix in thoroughly
•    Whisk egg whites to stiff peaks and then fold gently and thoroughly into the chocolate mix
•    Make a larger single mousse or divide into ramekins / glasses and chill for at least 2 hours
•    NB... This recipe is easy to scale up or down as it is 15g butter, 30g chocolate and 1 egg per person!
