The Good Food Factory: "New American Cuisine"

New American Cuisine is a fusion cuisine, which encompasses ingredients and techniques from around the world, while celebrating local, seasonal and heritage fruits and vegetables.
(Example Recipe: Beet-Orange Arugula Salad with Homemade Ricotta Cheese)
With a skills-based and hands-on approach to learning, young chefs will learn traditional cooking techniques, theories, history and practice, in a working kitchen, with a chef teacher, Amanda. Our classes have a strong emphasis of “garden to table” and incorporate fresh, local and seasonal produce whenever possible. Chef students will walk away from our classes with a working knowledge of culinary techniques and a foundation for being chefs their entire lives.
- Each Class Series consists of 6 classes.
- Each Class Series focuses on a specific Cuisine.
- Each Class, chefs cook a recipe from the different meal times:
- Breakfast, Lunch, Snack, Dinner and Party (Dessert).
- The 6th and last class culminates in a test of skills.
- Chefs cook generous portions to sample themselves.
- We frequently have enough to take home- bring reusable containers to each class so you don’t miss out!
- Classes are appropriate for ages 5-14.
- Class Sizes are kept low so that each chef is able to receive individualized instruction
- Level 1 is limited to 8 children per class
- Level 1 is priced at $35/student per class ($210 per series)
Level Based Learning:
There are currently 3 levels to Good Food Factory Classes. Ages are approximations, not requirements. We care more about chef skills and knowledge, than we do about a chef’s age. A chef with little to no knowledge, would want to enroll in a Level 1 course. Chefs with basic skills (measuring, pouring, chopping) would do best in Level 2. In each and every level we will focus on: Knife Skills / Kitchen Tools / Safety / Cooking Techniques / Ingredients / History / Terminology / Nutrition / Traditional Recipes.

Level 1 / Line Chef / No experience necessary / Appropriate for Ages 5-9
Teacher & Curriculum
Chef Amanda has been teaching children how to cook for over 8 years with after school classes, field trips, assemblies, birthday parties, cooking camps, and through her Emmy Award winning television show, The Good Food Factory. Her food philosophy focuses on “good food, from scratch!” and her classes have been described in the 2012 issue Best of San Diego Magazine as “the best way to get your kids to eat their veggies.” Amanda has always taught ‘real’ cooking to children: wholesome meals that involve a lot of chopping, grating and peeling, as well as fresh herbs, fruit and vegetables. Her students return time and time again to take more classes and it was through their dedication to learning and their hunger for advanced skills that she realized they were ready for more. “These kids could go to culinary school!” Amanda thought… and the idea for a cooking school for kids was born. A program where youth have the opportunity to learn step by step methods for being a master chef. However, there is only one rule: “The FOOD is the only thing we take seriously.” Cooking curriculum and programs offered by the The Good Food Factory are created and hosted by Amanda, and she promises that her classes are just as fun as they are delicious and educational.

The San Diego Model Railroad Museum is open Tuesday-Friday 11:00 AM - 4:00 PM and 11:00 AM - 5:00 PM on Saturday and Sunday. Children 5 and under are free, adult admission is $10.
