Hello Darling Foodies! 

It's been quite some time since you've heard from me, however, LIFE has pulled me in other directions. Not 1, but TWO precious grandsons have entered my life in the past two months. I feel so very blessed. It was with utter joy that I was present at the water-birth of my most recent grand-baby. A miracle to behold! Welcome Leo Bronze! (Yup his mom is an artist and mommy and daddy thought a color would make a good middle name for their little bronzed-skin baby). I've been having a blast doing the Grammy thing, which includes KNITTING!!! ...and lots of HUGGING.

And now, back to the kitchen...


We missed a couple of meetups, but have resumed a schedule which will include a potluck every 2nd Wednesday of the month. I do suggest you enable MEETUP notifications so you won't miss any updates regarding the meetups. 

For those of you not-so-local, here's a magnificent Herb Stuffing Recipe that I'll be serving at our potluck - in addition to a Raw Vegan Chocolate Demo! This  stuffing is SOOOO tasty, I think I may also adjust the recipe and convert it into a bread, or croutons! (Add some extra ground flax/water and a bit of almond flour...just a hunch, but have not tried it yet).

Rawfully Tempting Herb Stuffing
Feel free to add your own combination of herbs and seasoning, but the fresh rosemary and thyme really created an amazing mouth-watering flavor and consistency that is very reminiscent of traditional stuffing. It can be crunchy or moist, depending on your preference. 

Rawfully Tempting Herb Stuffing
2 cups sprouted buckwheat (check my website for instructions on sprouting) Note - BW does not need soaking more than 20 min, and sprouts by the next day, so this can be prepared a day in advance. 
2  cups celery, finely chopped
2 cups mushrooms, chopped (button or any variety)
1 1/2 cups carrots, finely chopped
1 cup  zucchini, chopped
1 cup onion, diced
1/2 cup sunflower seeds
1/2 cup pecans (soaked overnight), chopped
1/3 cup raisins
1 cup apple, chopped  
1/4 cup fresh parsley, chopped
1 Tablespoon extra virgin olive oil, (or coconut oil)
2 Tablespoons ground flax (mixed with 5T water)
2 Tablespoons raw honey (or your fav sweetener)
1 Tablespoon lemon juice
2 teaspoons  nama shoyu (or tamari)
1 Tablespoon fresh rosemary, minced (or 1 teaspoon, dried)
1/2 Tablespoon fresh thyme,  minced (or 1/2 teaspoon, dried)
1/2 teaspoon sage, dried
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 tsp sea salt  (to taste)

In food processor, pulse process buckwheat, leaving it rather chunky.

Transfer to large mixing bowl and add ingredients and seasoning. Mix well and adjust seasoning as desired.

Spread on non-stick dehydrator tray (about 1 inch thick) and dehydrate at 125 degrees F for 1 hour. Continue to dehydrate for 6-8 hours at 115 degrees F. Using spatula, toss and flip mixture every 2-3 hours to ensure even dehydration. 

Option - Serve as is or dehydrate completely (8-12 hours), store in refrigerator and just before serving. To soften a bit, add a few Tablespoons of orange juice or water, and toss to soften/rehydrate. Gently warm in dehydrator for 30 min at 115 degrees F and serve.

Sprout buckwheat in advance. 1 cup dried buckwheat usually doubles in size when sprouted.

I am going to attempt converting this recipe to a bread and will let you know how it turns out, but this recipe is also great sprinkled over salad, like croutons, or dehydrated totally, and ground into "bread crumbs" for coating marinated veggies and sprinkled over "pasta." Dehydrate for a lovely "fried" veggies effect. .
