First off, I want to thank you all from deep within my heart for all of your love and support. For those of you that took the time to vote...it paid off. THANK YOU! I am honored to have received two awards at the Thousand Oaks, CA - Raw Living Expo - 2014 - Best of Raw Event!!! 

Best of Raw Blog!! Woo hoo! Rawfully Tempting was the winner of this award and the truth is, I could not do it without all of you. So keep on reading..and commenting, and providing me feedback, so I know the kinds of things you are looking for, or need help with. 

Best Raw Vegan Gourmet Chef (0-5 years) was awarded to me, personally. Wow! I am speechless. After attending the event and meeting some of the wonderful people in person, that I only knew online, I am newly inspired to come up with some fabulous new creations as we embrace 2014!!!

 So thank you again. And while you are at it, if you feel so inclined, I've entered another contest. This one even more challenging, because it is for a Standard American Diet recipe site. MEXICAN STYLE CELERY ROOT CHOWDER
All you need is a good blender to create this fabulous, rich and creamy chowder. This is a keeper for sure. If you have a Vitamix, lucky you! Blend it a little longer to gently warm, and enjoy it's soothing comfort on a cold, wintery day. 

Option - For a great authentic smoky flavor, in place of Chipotle powder, add a touch of cayenne The Smoking Gun. Follow manufacturer's instructions. Using applewood chips, insert hose into blender (above ingredients) and smoke blended ingredients for 30 seconds. Keep top of blender covered with towel and let flavor permeate for 2-3 minutes. Remove hose and blend again. Chowder is ready to serve. Cold smoking with a hand-held gun is a raw fooder's Smoky Heaven! 

Ingredients
1 cup cashews (raw and soaked for 2 hours)
3 cups water
1 medium celery root (celeriac), peeled and cut into 1 inch cubes
1/2 cup fennel bulb, chopped
2 stalks celery, roughly chopped.
1/2 cup onion, chopped  
1/4 cup red bell pepper, chopped
1 teaspoon Nama Shoyu (or tamari)
4 sun dried tomato slices (soaked and chopped)
1 apple, chopped
1 Tablespoon light miso (rice or chickpea)
1 clove garlic, crushed
1 Tablespoon dried dill
1 teaspoon  lime juice
1/8 teaspoon chipotle powder or more to taste
1/4 teaspoon onion powder    
1/8 teaspoon cumin powder
black pepper, to taste

1/4 teaspoon sea salt

Garnish  
Chopped apples, dried dill, fresh or frozen(defrosted) corn kernels, red bell pepper

Directions
Blend cashews and water until creamy.

Add remaining ingredients and blend well. Transfer to soup bowls and garnish as desired.

Garnish
Garnish as deisred with any of the following: finely chopped apples, dried dill, corn kernels, red bell pepper, fennel fronds

Approximate Servings: 4
