Master Gao’s Puffed Rice Chinese Pale Ale
Like popcorn to Americans, puffed rice is a traditional snack to the Chinese. Before they started to vanish about twenty years ago, puffed rice vendors could be found on every neighborhood street corner. Vendors put the rice into a high pressure cooker, and rotate it over a charcoal stove. When the inside temperature and pressure reach their target, vendors release the cookers’ valve with an iron level wrench. With a big ‘bang!’, all the rice bursts out of the cooker, and gets puffed instantly when it hits the cold air.
When it comes to brewing, whole grain puffed rice provides a clean and crisp body, with concentrated rice flavor. As a result Master Gao’s Puffed Rice Chinese Pale Ale has notes of saké & malt, balanced with tropical hops and a very dry finish. This selection is a most remarkable combination of saké, saison and Champagne.

Next, we have a beer from head brewer Luigi “Schigi” d’Amelio, a well-known sommelier in Italy. This beer is inspired by his brewing philosophy of having the deepest respect for the history and traditions of the great brewing regions and their beer styles. Inspired by the Belgian brewing traditions, the aromas and flavors make you think you are in Belgium!
The Zest provides a golden appearance with green “vibrations” and a white, compact, persistent head. An intense nose of orange blossom, with decided hints of yellow fruit and citrus. A delicate hop spiciness, with a lightweight body (due to the absence of residual sugar), makes this beer refreshing and very drinkable. What follows is a dry, sharp, and prolonged finish.
Did you know Birrificio Extraomnes was recognized for remarkable consistency, and excellent quality by the Slow Food Guide 2015 “Guida alla Birre D’Italia 2015”.? If not, it reflects significantly well in your final beer selection this month.
Straff has a misleading innocent appearance, that is beautiful and golden, with a white creamy head. The nose of fresh fruit, apricot and melon, Mirabelle Brandy and a slight earthy note reminiscent of the style. The initial soft palate is immediately damped by a bone-dry cutting and a balanced bitterness.
