Eco Camp Registration Now Open

The 2015 Eco Camp sessions are now open. You can register your kids for one of four week-long session. Dates are as follows:
  • June 15-19 --> Grades 1-2, Cost $75
  • July 6-10 --> Grades 3-4, Cost $75
  • July 20-24 --> Grades 5-6, Cost $75
  • Aug. 3-7 --> Pre-K (Ages 4&5), Cost $35 (Only half day sessions)
Veteran Eco-Counselor, Michelle H. says, "There are many reasons to send your kids to Eco Camp. Kids will immerse themselves in all things sustainable. We talk about gardening and they see the process in getting their food from the ground to the table and participate in that entire process. But, one of the biggest reasons I would send my kids to Eco Camp is because it's fun!"

Field trips, games, crafts, and much more await kids during their week-long day camp session.

Nora W, coming into her second year as an Eco Counselor, states, "My most favorite part of Eco Camp is the lessons that are hands on and interactive. We get to show kids all the really cool things about the wildlife that we have here in Minnesota."

Agroforestry Workshop on Campus
Please join us for the Minnesota Agroforestry Institute, a three-day training that includes classroom workshops and on-farm visits focusing on agroforestry practices. It will provide all participants the opportunity to integrate the concepts learned into a practical farm plan. Work with agroforestry instructors on all sorts of agroforestry practices from Wednesday, June 24-Friday June 26.

The cornerstone of this event will be an applied planning and design exercise. Agroforestry Institute participants will work in small groups to gain hands-on practice in agroforestry design based on the needs of a working farm.
Registration closes on May 31, 2015. You can sign up online. The event will cost $100 and will cover the costs for three lunches, two dinners, and refreshments. To find out more information on agroforestry practices and on the event, click this registration pamphlet.
Memorial Day Grilling Recipes
Memorial Day is Monday, May 25. You'll want to have something prepared for your grill by then. In the past, we've recommended different BBQ rubs and vegetarian grilling alternatives. So, here's one that is sure to make you salivate.

Grilled Foil Roast Vegetables
  • Cauliflower
  • Mushrooms
  • Carrots
  • Squash
  • Zucchini
  • Snow peas
  • Onion
  • Potatoes
  • Green pepper
  • Red sweet pepper
  • Broccoli
  • 1 stick butter
  • 1/4 c. water
  • Salt & pepper to taste


Use fresh vegetables only. You can use any of the vegetables above, to taste.
Make a sealed pouch from 2 large pieces of foil.
Leave one end open. Put ingredients in and seal.
Cook on medium heat for 15 minutes. Turn and cook 15 minutes more.
Take from grill, place pouch in deep pan before opening.
