Eco Camp Introduces the
Planet Power Pals!
Eco Camp is just around the corner. We've ironed our capes and personally inspected every tree in the forest. All we need is you. We are now taking new recruits for the Planet Power Pals squads. You can join forces with the Raccoon Rascals, the Bear Brigade, the Bat Battalion, and the Rabbit Rangers. Open to young adventurers ages Pre-K to 6th grade, the Planet Power Pals will instill sustainable values, such as environmental stewardship and a love for the outdoors.
Registration is open, but spots are being snatched up as quick as a big dollar sign bag stuffed with money. So, be sure to hurry, because, we're ready and waiting...for you!
HDT Searching for the Right Vista Candidate.
Do you know anyone who wants to make a difference in the lives of youth? We're looking for a year-long VISTA intern to help address poverty and food insecurities. We're looking to expand our Food Youth Biz program, a program intended to unite strong growth in the local food sector with agricultural opportunities for area youth.
HDT Grounds Manager and FYB instructor, Jim Chamberlin says, "The FYB program is a solid way to reconnect with the rich agricultural history of the area. With a variety of recent issues arising in agriculture, such as the local foods movement, an increase in soil health awareness, and an aging farmer population, this program is a good way to support our local community."

Spinach & Strawberry Salad
Spinach and strawberries will be making their appearances soon in gardens and farmers markets, so here's a delicious, tangy, and quick recipe that will have you saying, "Yum!"
- 4 cups sliced strawberries
- 1/2 cup vegetable oil
- 1/4 cup white wine vinegar
- 1/2 cup white sugar
- 1/4 tsp paprika
- 2 Tbsp sesame seeds
- 1 Tbsp poppy seeds
- 2 bunch spinach rinsed and torn into bite sized pieces
- 1/4 cup walnut halves
- In a large bowl, toss together the spinach and strawberries.
- In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds.
- Pour over the spinach and strawberries
- Toss to coat.
- Garnish with walnuts to taste
