Chef Simone’s menu this month features some of his favorite Umbrian dishes, including a special deconstructed lasagne with mushrooms and Umbrian truffle and his signature spezzatino with Sagrantino wine sauce on a bed of polenta. You'd have to fly to Italy to get a more authentic dinner!
