Preserving the Harvest
As we celebrate all the amazing flavors of a Minnesota summer, the cooler days have me thinking of the garden bounty I can save for the season ahead.  I learned canning from my mother and grandmother, but the very nature of our tomatoes has changed since their day, and our processing methods have evolved accordingly. Do it Green! Minnesota provides all the info you need in Home Food Preservation to guide you through the various methods of keeping the harvest.

On the farm, our sauerkraut crock sat on the back stoop covered with a plate weighted down by a rock. That image can raise goosebumps today, with our growing awareness of food safety. Check out Embracing the Deliciousness of Fermented Foods for safe and healthy fermentation. Your winter table can still taste of sunshine!
