Commodore's Comment

Kia Ora Mana members and Merry Xmas, as this is the last letter for 2018.

Your committee have been focused on delivering the processes advised in the last newsletter. As I write this the clubs power is currently off and our new main electrical distribution board is being installed, ready for the kitchen refurbishment commencing from the 21st December.

The trial involving relocation of cradles to the East yard to make more room for trailer boat parking, reducing ramp congestion and remove H&S risks associated with conducting both services from the main yard, is well underway. In December we will create two trailer boat wash points adjacent to the club, away from the launch ramp to further reduce congestion

Our restaurant contractors have resigned effective 20th December 2018, on behalf of the Mana Cruising Club I thank Steve and Val for the services provided the Mana Cruising Club as well as the invaluable assistant in working with your committee in handing over restaurant operations. The club restaurant will re-pen with its own employees late January 2019, the start of a new era, with a new menu and pricing. Members will be able to order wine with food and as we will operate both restaurant and bar with our own staff we will be able to serve tables as well. We really need your support going forward, it’s your club and staff now so please work with us to ensure we get the mix of price, service delivery and menu right.

Several CV’s have been received for the new Club Manager’s role, some initial interviews taken place, we are reviewing the job description and employment terms, with the view to having this person appointed to work with the new restaurant opening. Once appointed the following Eletter will include a bio of our new Club Manager, their experience, and a few words from them about their goals for our club.

Critical Dates:

* Thursday 6th December I will provide an update on the Joint Venture negotiations with the Marina Company and have a revised “Option 5” yard layout drawing on a board in the club house for members review.

* On the 6th December I will also advise of the date for a Special General Meeting to be held regarding the yard restructure plans, currently it is anticipated the date will be early February 2019.

* Kitchen closed from 20th December to 20th January, while dining will be closed over this period, we will be able to provide microwave meals and barbecue food while the kitchen is closed to ensure we comply with our Bar Licence requirements.

* We are also having the main wardroom floors resurfaced over Xmas and kitchen work will cause some disruption to this facility, so alternatives will be notified. With the restaurant and wardroom work, the club will operate from the upstairs bar for some evenings, refer to the notice board as you walk in.

New Processes/Facilities:

* Thank you for all the trailer boat owner responses to the recent survey, the information received is valuable and many of your issued are being dealt with in Option 5 plan being presented on the 6th December so please attend this club night, see what we’re doing, ask questions and be part of this process.

* Some changes will also be noticed soon in our yard operations, we have another person helping Colin part time and we hope to have our new cradle/lift web portal booking system and website and yard restructure work online early next year.

I look forward to meeting and hearing from you what you think of our progress and changes. Feel free to email me on your concerns or ideas, we need your feedback. With so much going on we will continue seeking your views with targeted member surveys over the coming year.

Club Office Christmas closure

The office will be closed from the 28th of December until the 3rd of January.  

If you need to pick anything up before your trip to the Sounds e.g. mooring map, mooring penant or Club Burgee please arrange with the Office before Xmas.  
Pre-ordered items can be picked up from the bar as that will only be closed on Christmas Day.

Adults Christmas party - For adults over 18!! Come and share Christmas Dinner and a Jukebox to let us choose our own music - there's bound to be a few Christmas songs in the mix!!

Thursday 20th December - Last club night for 2018.

Kitchen Christmas shut down - from 21st December when the kitchen refit will be taking place. 

January 16th - Upstairs Bar for members - while ward room floor is cleaned and resealed. (Date subject to change - please check notices as you enter the club)

From the Editors

Welcome to the last newsletter for this year (next edition is currently planned for the end of January).  Next year we will be marking the 60th Anniversary of the club with some special events.  If you are keen to have some input in the planning for next year please email me and I will pass your name on to the sub-committee. 

We are looking for a new editor for next year as work and school commitments are changing in our household - anyone interested please let me know and I will show you how the system works.

Yard Charges:

The new Yard charges are about to be implemented into the Club’s MYOB invoicing system. Yard services will become “products” in the system for ease of entry and accuracy. This should also provide better analysis for the future. The charges will be published as a PDF on the Club website or available from the office rather than pre-printed, as now. This will be in place by the end of the year. The new charges will be effective from 01/01/19.


Travel Lift and Cradle Booking System

Part of the yard management restructure will be an online booking system. The system will be available from the Club website and will replace the current manual system. Vessel owners or their representatives will be encouraged to complete an online application. We plan to utilise existing Club Vessel records, it will therefore be important to keep these up to-date. We expect the system to evolve over time, the first release is planned to be available early next year. Your feedback will be appreciated, and we will include a process to receive this.


Yard Physical Restructure

As Allan mentioned in his report this process has started. It’s a juggling act, we do it as we can. Ted had a Hiab in recently and made some good progress. Please be aware of our short-term objectives to improve service to trailer boat owners and minimise health and safety issues. We still need to maintain a well-managed and utilised Travel Lift / cradle operation.

In the future Mast storage will be limited to alongside the vessel, at the same time it is out of the water. We are also unlikely to have space for other casual or longer-term trailer boat parking. Vessels utilising cradles for extended periods that are not being actively worked upon will be subject to new haul out Terms & Conditions. We plan to limit cradle utilisation to a maximum of 1 month. After this time escalated charges will apply unless there is a prior agreement.

To minimise launching congestion, we are also considering modifying Travel Lift operations to exclude Sundays and only available for Lift & Hold on Saturdays.

We believe these proposed changes are necessary for the benefit of the majority of members and we are giving plenty of notice, so you can do something if you are affected. We value your feedback, please if you have a suggestion, let us know.

Farmer Jans tried and trusted recipes

Preserved lemon butter - keep in the freezer and cut a frozen slice to dob on hot fish
250g butter softened
1/4 cup finely chopped preserved lemon (only use the peel)
1 tablespoon finely minced garlic from a jar
3 tabblespoons finely chopped parsley
Pinch chilli flakes optional
Place all ingredients in a bowl and work until combined. Place on cling wrap and roll into a Christmas cracker and twist the ends.
Refrigerate or freeze and use as required.

Smoked Kahawai Potato Cakes (Al Browns recipe with advice from Farmer Jan) 
⅓ Cup Canola Oil
 ½ Cup Onion (finely diced)
 ½ Cup Celery (finely diced)
 ½ Cup Green Capsicum (finely diced)
 650g Agria Potatoes (peeled and cut into small dice)
 550g Hot-Smoked Kahawai
 ½ Cup Flat-Leaf Parsley Leaves (finely chopped)
 ½ Cup Chives (finely chopped)
 1 Cup Mayonnaise
  Finely Grated Zest and Juice of 1 Lemon
  Flaky Sea Salt
  Freshly Cracked Black Pepper
  3 cups Panko or Regular Breadcrumbs

Place a skillet or sauté pan on medium-low heat. Add the oil followed by the onion, celery, and green capsicum. Sweat for 20 minutes without colouring until cooked through.
Place the diced potato in a suitable-sized saucepan and cover with cold salted water. Bring up to the boil on high heat and cook until just soft, about 5 minutes. When just soft but not falling apart, remove from the heat, strain and spread on a tray to cool,(mash gently).
Take a medium to large bowl. Pick through the smoked kahawai with your hands, loosely breaking up the fish and removing any bones. Add the cooked sweated vegetables and the potato. Now add the parsley, chives, mayo, and lemon zest and juice. With clean hands, blend the ingredients together until combined. The potato will help bind the cakes. Taste and season with salt and pepper.   Put the panko or breadcrumbs in another bowl. Mould the smoked fish mixture into 12 even-sized cakes, and liberally crumb.  (Refrigerate until required as needed.)

Heat your barbecue flat-top or skillet to medium-low heat. Once hot, brush with a liberal amount of oil. Cook the smoked fish cakes until golden on either side and hot through the centre.
