Transitional periods are interesting phenomena that don’t obey to the normal law of evolutional change. They are revolutionary by nature. Ilia Prigogine, an innovative scientist from France in the study of fluids and their behavior found that the normal laws of fluids do not apply in the transitional periods. He was giving the example of the milk boiling in a pot. At the time that milk transition from the liquid state to the boiling state it is not predictable by the fluids normal laws when the milk will spill from the pot and how sudden this will happen.  (continue)

Crostata, Italian for sweet tart, are a rustic version of the American pie and much less fussy to prepare than French tarts. I first sampled a flat apple tart baked in this style from a wood-fired pizza oven, made to order, in a crowded Parisian pizza parlor. It is flatter than a regular pie since it is freeform and every so much quicker to make. (see the full recipe).
