Lemons (and other citrus fruit) are a staple in any healthy household, as they add a splash of nutrients and flavor to any dish and a bevy of drinks. But if you’re only using citrus juice, you’re missing out on a serious dose of vitamins.

Lemon peels contain five to ten times more vitamins than lemon juice. In every 100-gram serving of lemon peel, you’ll get 134 mg of calcium and 129 mg of vitamin C, whereas the lemon without the peel has just 26 mg of calcium and 53 mg of vitamin C, according to the USDA.

Historically, herbalists have been using citrus rinds to heal many conditions. In Traditional Chinese Medicine, mandarin orange peels are used to help improve digestion, relieve bloating and help heal respiratory issues.

Even more recent research of d-limonene, the primary essential oil found in citrus peel, has shown positive health effects. Scientists found that d-limonene from blood oranges has great potential for preventing colon cancer.

So start using those peels for good. You can zest fresh lemon to make your own lemon-pepper seasoning or make your own lemon olive oil that’s ready for marinades or to add zip to pancake batter.

If you, like us, are the type to forget about lemons until they shrivel up, freeze them before they go bad: Simply give them a good rinse, dry them off and stick them in the freezer. Frozen lemons are good anytime and you can grate the whole fruit on top of salads, soups or even ice cream.

You can easily dry citrus peels in a single layer on a plate or drying rack in just a few days too. Store them in an airtight container and add peels to tea for a boost of flavor and vitamins.
