Recipe of the week
I love Steelhead trout's versatility. It will work with virtually any salmon, ruby trout, or rainbow trout recipe; though the cooking time will be most comparable to that of a salmon recipe. Steelhead has a slightly leaner meat than farmed salmon and a fuller flavor. Great for grilling, baking, and smoking; the possibilities are endless!
Salmon Fillets in Red Wine (recipe credit: Mark Bittman, Fish)
Makes 4 servings
Time: 30 minutes
2 tablespoons butter
1 tablespoon olive or vegetable oil
4 skinned salmon fillets, about 6 ounces each, of roughly the same thickness
Flour for dredging
Salt and freshly ground black pepper to taste
1 medium-size onion, diced
2 cloves garlic, minced
1 medium-size carrot, cut into 1/4-inch dice
1/2 cup minced fresh parsley
1/4 cup any fish or chicken stock or water
1 cup dry, full-bodied red wine, such as Bordeaux or Cabernet, Barolo, or Rioja
Heat a 12-inch nonstick skillet over medium-high heat. Add the butter and oil, turn the heat to high, and wait for the butter foam to subside. Quickly dredge each of the fillets in the flour, shaking off the excess, and place them, flesh side down (not the side that originally had skin) in the skillet. Season with salt and pepper, brown them quickly, remove them from the pan to a plate (flesh side up now), and keep warm in a low oven. With the heat on medium, add the onion, garlic, and carrot to the pan and cook, stirring, until the onions soften lightly. Add half the parsley and some salt and pepper and stir. Add the stock, raise the heat to high, and reduce until it is almost evaporated. Add the wine and reduce by about half. Return the fillets to the pan, skinned side down, and cook over medium heat until the fillets reach the desired degree of doneness (peek inside with a thin-bladed knife), about 3 to 5 minutes. Sprinkle with the remaining parsley and serve immediately.
