While some of you may have had a father who loved to cook, most likely, your mother spent the majority of your childhood and young adulthood cooking healthy meals for you. So why not say "thank you" this Mother's Day (Sunday, May 8th) with a healthy home-cooked meal? We've got some great fish on special this week in the market...Stop in and pick up some delicious sea bass to treat your mother on her special day. For something really unique, try ono wahoo fillet; it's delicate, circular white flake is irrisistable! From a mother of two wonderful children...Happy Mother's Day!

Recipe of the Week
Seared Sea Bass with Spicy Soffrito (from Stir by Barbarba Lynch and Joanne Smart)

1 small white onion, finely chopped
1 small carrot, peeled and finely chopped
1 celery stalk, peeled and cut into small dice
1/2 yellow bell pepper, seeds removed, finely chopped
1/2 red bell pepper, seeds removed, finely chopped
1/2 green bell pepper, seeds removed, finely chopped
1/2 jalapeno pepper, seeds removed, finely chopped
1 large garlic clove, finely chopped
3 tablespoons extra-virgin olive oil, plus more for cooking the fish and serving
1 1/2 teaspoons sherry vinegar, plus more to taste
1 1/2 teaspoons honey
1/4 teaspoon crushed red pepper flakes, plus more to taste
Kosher salt and freshly ground black pepper
4 sea bass fillets, each about 6 ounces
1/4 cup finely chopped fresh parsely
Fleur de sel (optional)

In a medium saucepan, combine the onion, carrot, celery, all the peppers, garlic, 3 tablespoons olive oil, vinegar, honey, and crushed red pepper flakes. Season with 1/2 teaspoon salt and a few grinds of pepper. Cook over medium heat, stirring occasionally, until the liquid in the pan has reduced and the vegetables are very tender, 45 minutes to 1 hour. Season to taste with salt, pepper, red pepper flakes, and vinegar.

To serve, heat 1 to 2 tablespoons oive oil in a large nonstick skillet over medium-high heat. Pat the fillets dry and add them to the pan skin side down. Cook, undisturbed, until lightly browned on one side, about 3 minutes. Gently turn the fish over and cook until just barely firm to the touch, another 3 to 4 minutes. depending on thickness. (If you can't fit them all in one pan with room around each fillet, cook them either in two pans or in batches, transferring them as they cook to a bakeing sheet and keeping them warm in a 300 degree F oven.) Season lightly with salt and pepper and serve each fillet skin side up, over a few tablespoons of the warm soffrito. Finish with a drizzle of extra-virgin olive oil, a sprinkling of parsley, and if you like, a pinch of fleur de sel.

Lobsterfest Saturdays - Live Maine lobsters are flown in Saturday mornings and boiled to-order from 12 p.m. - 9 p.m. When in season, we also boil live Dungeness crabs flown fresh from the West Coast. Lobsters are $19.99 each and Dungeness crabs are just $15.99/lb.
