We encourage you to "Go Texan" this Super Bowl weekend, and shop at your local markets for Texas-raised and Texas-made products. According to the Austin Independent Business Alliance, "for every $100 in customer spending at a national chain, the total local economic impact is only $13. The same amount spent with a local merchant yields $45, more than three times the local economic impact." Taste of Austin ~ Happening Today!
We will be at the Taste of Austin event TODAY from 5:30 to 8:00 p.m. at the Palmer Events Center. Stop by booth D7 and sample our delicious Crawfish Enchiladas and Spinach Krab Queso! The Taste of Austin event is organized as a joint venture by the Westwood High School DECA Marketing Club and the Greater Austin Restaurant Association. Proceeds benefit both non-profit organizations providing funds to support the GreaterARA Student Scholarship Fund and the Westwood DECA Student Marketing Fund.

Recipe of the week
Blackened Drum Fillets with Remoulade (adapted from CDKitchen)
Serves 4

Blackening seasoning
6 tbs. mayonnaise
1/2 small onion, chopped
2 tbs. chopped parsley
1 tbs. lemon juice
2 tsp. capers, drained
1 tsp. dijon mustard
1/2 tsp. sugar
1 tbs. Quality Seafood Market's Blackening Seasoning
2 tsp. canola oil
4, 6-ounce black drum fillets, skinned

To prepare the remoulade combine the mayonnaise, onion, parsley, lemon juice, capers, mustard, and sugar in a medium bowl; blend well and set aside. Combine the blackening seasoning and paprika on a piece of wax paper. Heat a large skillet over medium-high heat until hot; swirl in the oil. Turn on kitchen fan and open windows if necessary. Dip each fillet into the seasoning mixture, then immediately place into the hot skillet. Repeat with the remaining seasoning mixture and fillets. Cook, turning once until the fish is blackened and the fish flakes easily with a fork, about 3-4 minutes per side. Serve immediately with the remoulade.
