Fall vegetable soups are so easy to make. Take squashes, potatoes and/or root vegetables, dice, toss with oil, garlic, salt and pepper then roast in the oven until soft. When ready, put them all in a pot, add broth, cook for 30 minutes and then puree. It is so good for you and so good to eat.
