Food Fun: Eggplant Involtini
Perfect for that last summer party, Eggplant Involtini can be an appetizer or a main dish. Grill, sauteé or broil thinly cut slices of eggplant and then stuff and roll it around anything that speaks to your senses. It's also a great dish to get little kid fingers involved - a little messy and stuffing requires no sharp utensils.
