We've just received a delivery of much-anticipated 'pecan-fed' prosciutto made from pure Berkshire pigs that spent last Autumn grazing through an old Pecan grove and feasting on the fallen nuts. It's really good. The pecans in the pigs' diet makes for a particularly soft, sweet fat and a very delicious pancetta.

The pigs are grown at Gerard Coren's family farm near Woodville on the Paterson River in the Lower Hunter, NSW. About 30 years ago, Gerard's father planted a Pecan grove on the neighbouring farm - which also happens to be the oldest continually farmed property in NSW. It's those wind-fall pecans that provided such a feast for the pigs and which, in turn, flavoured this lovely pancetta. That's the pigs below, doing their piggy thing and enjoying the nuts.
Pork Shoulder for Christmas
Still on pork. As you know, we only buy whole, pasture-raised animals and each animal only yields a finite amount of each cut. As you also know, December is Peak Pork and there is huge demand for bellies (porchetta, racks and loin roasts) and legs (hams). This means we're almost sold out of both of these cuts which leaves us all with the excellent option of tucking into a grand pork shoulder over the festive season. Shoulder, as you also know (you're so clever, you lot), is a 'secondary' cut which means it does a lot of work and, while the harder-working cuts require a little more cooking to tenderise, they also provide the most flavour. This is the reason our Miss Lucy chooses Shoulder Porchetta over loin any day. 

Wrap your laughing gear around a gorgeous, rolled, roast  Shoulder Porchetta  - sweet, marinated pork encased in salty crackling.

Of course, it's possible that pork isn't your thing at all in which case you might be interested in the Lambchetta which is another lovely festive option.

Order dry-aged beef cuts 
We're dry-ageing Gundooee Organic Wagyu and Glenburnie Black Angus prime cuts ready for the last two weeks of December including standing rib roasts, ribeye cutlets, sirloin and rump roasts and, of course, steaks a plenty. Remember, the body only yields a limited amount of eye fillet, scotch and sirloin so, if you're after something particular like a standing rib roast for six or more, please order as soon as possible so we can bags your cuts and you won't miss out.

This year we collaborated with Sydney artist, Mirra Whale, who made us this lovely lino cut print for our calico ham bags. Keep your ham snug and fresh in style or give it as a gift. You can never have too many ham bags (but I think we should do a teatowel too)... A beautiful gift too.

If you're planning to visit us at our butchery at Marrickville and you're coming by car, please make sure you park in front of Feather and Bone. We have plenty of parking outside our Unit and you are also welcome to park in our driveway.

The second Good: we'll use proceeds from the raffle to add to our annual contribution to the Two Good Foundation's Christmas Feast at St Canice's Church Soup Kitchen on 19th December. We've been supporting the Two Good Foundation since 2010 and each year we contribute to the annual Christmas soup kitchen dinner, served to about 80 people. The feast includes a spit-roasted lamb, hams and lots of other lovely food and the diners will be serenaded by the Sydney Street Choir. The more raffle tickets you buy, the more we'll be able to offer the soup kitchen guests at Christmas dinner.
