As we hurtle irrevocably toward the Festive Climax, it's critical to prepare well in advance to ensure that you are protected from disappointment and you have all the key components in hand for a fabulous event. Whether you're tucking into turkey at the table, picnicking on porchetta in the park or grazing on goose in the garden; be prepared!  Whatever your denomination or cultural code, plan what you require for your Festive Feast (meats, sweets, wines, super-fresh vegetables and fruits) and organise it now. 

Because you do not want to find yourself in those last few frantic days, exposed, frightened and thrashing it out with the other delinquent desperados in the aisles of Aldi or Coles, fighting the Ham Zombies for the last few, miserable,  flavourless, nutritionally-compromised, 'free range' hams and turkeys, do you? So instead of leaving it all to the last minute...

BURRADUC  BUFFALO DAIRY -  order now to avoid missing out 
If you want award-winning Burraduc buffalo dairy goodness from the mid-north NSW coast at your Festive Climax, then you'll need to email us your order as soon as possible. Mozzarella,  Dolce Nina curd, feta,  yoghurt and rare, fresh Buffalo milk. We get fresh deliveries of Burraduc produce every Friday - last delivery will be on Friday 20th.
DRY-AGED, PASTURE-FED AND FINISHED PRIME BEEF
If there's something in particular in the dry-aged beef department that you're after for your Festive Climax, we recommend you letting us know now. That way we can put your name on the carcass and you'll be sure to get what you want. After all, we are whole animal butchers and we do not buy boxes of prime cuts to meat demand (sorry). Each carcass only yields a finite number of ribeyes or sirloin steaks. So if a grand, standing rib roast is your idea of festive feasting then bags yours now.

NONIE'S CHRISTMAS CAKE & PANPEPATO (gluten free)

We've been thinking a lot lately about how food is a wonderful way of binding and strengthening communities, large and small, the more diverse the better. The more we reclaim knowledge and share ideas, the stronger, more tolerant and open-minded we become. The way we see it, we're no different from the networked communities of microbes, fungi, plants, insects and animals on the farms we work with - the more closely we're connected, the more healthy and resilient we are. 


We'd love you to post photos of the food you cook, your recipes for eating the whole animal, your successes, your failures, your concerns and anything that you think will improve our collective understanding and make the rest of us weep with laughter (that bit's important). Any useful tips on taming feral children, preferably food-related, are also welcome.
CHEW THE FAT  Read our blog for stories from the farms, produce and event news, ruminations on value and trust, a few dodgy jokes and the occasional rant about food labelling. Sometimes we talk about our pets - chickens, children, dog.
