Letter from Jason, Proprietor


Dear Honey Run Friends,
I am always amazed at the consistency of time. Every year spring arrives either on March 19, 20, or 21st. This year the Vernal Equinox will be arriving on March 20th and to be more precise it will arrive at 7:02 EDT at Honey Run. This incredible event only happens twice a year and for us and for our neighbors in the Northern Hemisphere this is when spring and fall are ushered in and the earth for a moment is neither tilting towards or away from the sun

Spring's Bounty

Spring is just around the corner……..hopefully.  While the Inn during winter is a beautiful and serene place, I’m ready to explore the bounty of spring.  We are very fortunate to have many edibles on property that can be foraged.  Morels, fiddle head ferns, and ramps can be found in abundance.  This month’s recipe features two other hallmarks of spring; asparagus and Meyer lemons.
