SOULNOURISH RECIPE OF THE MONTH: Potato Leek Soup

It has been chilly and my body wanted comfort food so I decided to make some vegan potato leek soup. You can assume all my ingredients are organic. Start by putting olive oil in big pot. In another pot boil some potatoes in water boil until they are soft. I prefer red potatoes and leave the skin on for added texture, nutrients and potassium. Chop up a couple leeks and put in hot olive oil with: a hole head of diced garlic cloves, an entire head of stalked stringed celery, 1 bunch of scallions. Layering them in as contents cook and soften. Use some water from cooking potatoes to keep leeks, onions, garlic and scallions from drying out. Add a bunch of fresh chopped parsley, a bunch of baby kale. Hold some scallions and parsley back to add near the end for a nice finish. Small amount of Himalayan salt, pepper and Italian seasoning. Smash up potatoes into water when soft. Add mixtures together. Add a couple cups of oat milk and 2-3 TBS of Miyoko butter. Run mixture through Vitamix- place back in pot. Finish off by floating scallions and parsley you held back. So yummy!  Good for the body and soul! -Soulicious, Soulnourishment by Dr Randall
