It's been a great summer
The last months were filled with diverse activities. Between consultations, travelling and lecturing, I managed to finish creating the Traditional Chinese Medicine course for the university and spend some quality time with my daughter. I also met some wonderful people on Salts Spring Island in Canada.  Now it's back to the Caribbean for a while.
Will miss my friends in Fairfield and beyond but, "I will be back!"

Bitter Is Better!
Bitter melon is one of my favorite vegetables. Many people do not like the bitter taste but for me it’s just right.  To remove the bitter taste you can pour hot water over the bitter melon and let it stand for a few minutes.  Drain the water before cooking. Bitter melon is a favorite vegetable  in Trinidad among the east Indian and Chinese population  My favorite is in black bean sauce and in curries.
Bitter melon is rich in iron, and has twice the beta carotene of broccoli, twice the calcium of spinach, twice the potassium of bananas, and contains vitamins B and C. Its bitterness comes from the high concentration of quinine.
Although research so far has been inconclusive, bitter melon has been used for generations in Traditional Chinese Medicine ( T C M ) and Ayurveda to treat a host of ailments including,  various stomach and intestinal disorders, gastrointestinal (GI) upset, ulcers, colitis, constipation and intestinal worms. It is also used for diabetes, kidney stones, psoriasis and fever.

Benefits of eating bitter foods
According to T C M,  bitter taste removes heat and toxins from the blood and liver, and   reduces inflammation. It is believed that bitter melon cleanses and purifies the blood.
Topically, bitter melon is used for deep skin infections (abscesses) and wounds.

Bitter  stimulates the taste buds and activates the digestive juices, thereby aiding in digestion. Bitter taste cleanses the body, boosts your metabolism and reduces the urge for sweet foods. So the next time you are shopping grab some bitter greens and vegetables such as, kale, arugula, bitter melon, or watercress.   You will be surprised how adding bitter foods to your diet will improve your digestion and well being.  
As a precaution, before taking bitter melon, it is advisable to speak with your doctor if you are pregnant or taking medication for diabetes.

Bitter melon recipe

1 large bitter melon

2 tbsp ghee or coconut oil
large piece of fresh ginger
1 tbsp of brown sugar


Wash and slice the bitter melon into circles. Remove the seeds.
In a saucepan add ghee or coconut oil. When oil is hot add the bitter melon and stir until pieces turn light brown in color. Grate in the fresh ginger and stir. Then sprinkle the brown sugar over the bitter melon and stir. Remove from the stove and serve with basmati rice and dhal.
